Two Dressings: From Sesame Ginger to Spicy Thai


This recipe and I go waaay back.

In high school I worked at a local health food store called Healdsburg Natural Foods. They had a little (I mean tiny) deli in the back where we would make some delicious natural foods and salads. Though the health food store no longer exists, I have some great recipes and fond memories courtesy of Isis. She was a real innovator in the kitchen and taught me a lot about making great & healthy food. If you’re out there Isis – thanks!

These two dressings are very versatile and double as marinades or dipping sauces. They are truly out of this world! It all starts with one dressing, Sesame Ginger, and with a few tweaks it morphs into Spicy Thai. I use the Spicy Thai dressing in my Spicy Thai Noodles, trust me, you will want to make this.

Let’s get down to business…from Sesame Ginger to Spicy Thai…

You will need soy sauce, vinegar, vegetable oil

some honey, peanut butter,

toasted sesame seeds, 2 cloves of garlic and

2 Tablespoons of coconut.

In a food processor or blender

drop in the garlic

and a 2″ piece of fresh ginger. Yep, skin and all.  Don’t worry, we are going to strain this in a bit.

Add ¼ cup vinegar

and ¼ cup soy sauce.

Now blend it all up.

It will look chunky. But not for long!

Let’s get to straining.

Dump it all into a colander and let it sit for a bit.

Rinse the blender out and set aside.

With the back of the measuring cup press down on the ginger/garlic mass in the strainer.

A lot of juice is still in there!

Add the strained liquid into the blender.

Add 1 teaspoon toasted sesame seeds and

1/3 cup oil into the liquid.

And give it a good whiz.

Now turn the blender on low

and slowly drizzle in 2 Tablespoons of honey.

STOP! You now have Sesame Ginger Dressing that’s out of this world!

Want Spicy Thai Dressing?  Then let’s do some tweaking to our sesame ginger.

The morph part begins now.

To the sesame ginger dressing add 4 Tablespoons peanut butter and

chili garlic paste.  Look for it in the Asian aisle.

You’ll want 2 Tablespoons of this hot and spicy goodness.

Plus 2 Tablespoons coconut

and 1 seeded jalapeño chili.  Okay, keep it seeded if ya want it hotter.

Then blenderize it until

you have this lick your chops yum Spicy Thai Dressing.

Morphing now complete.

Sesame Ginger Dressing

1-2 cloves garlic
2″ piece of fresh ginger
¼ cup vinegar
¼ cup soy sauce

Blenderize to liquefy. Strain the liquid. Press down on the ginger/garlic mass in the strainer. A lot of juice is still in there! Rinse out blender. Add the strained liquid into blender.

Add:
1 teaspoon toasted sesame seeds
1/3 cup oil
2 Tablespoons Honey

Start blender on low and slowly drizzle in 2 Tablespoons Honey.

Stop here for Sesame Ginger Dressing that’s out of this world!

For the Spicy Thai Dressing

Add 4 Tablespoons peanut butter
2 Tablespoons Chili garlic paste
1 seeded jalapeño chili
2 Tablespoons coconut

Blenderize this mixture, until thickened. Yields about 1 ½ cups.
